To make this salad we take a large mixing bowl and spoon in quinoa, asian rice mix, roasted butternut squash and roughly chopped flat leaf parsley. This mix is tossed and carefully scooped onto a bed of sweet salad leaves with roasted chunks of beetroot, freshly sliced cucumber and crumbled Greek Feta. We then top it with a lemon wedge and serve with our French dressing.
